Apple flat out doesn't support LE Audio. They should, it's better than MFi.
MFi is a proprietary but Bluetooth LE based (4.0 or 5.0 depending--5.0 for recent HAs) that Apple only supports on iPhones, iPads, and most but not all Apple Silicon MacBooks. They don't and never have supported it on any flavor of Apple Watch or Apple TV, or on any Intel Macs.
So it's a triple shame on Apple-- they went all in on their proprietary standard back in 2013 and refused to share (for something health related, that's probably more important than vendor lock-in), then they failed to bring that proprietary standard to all of their devices, then lastly now that there's a superior standard (LE Audio/Auracast) they have lagged behind their major competition and unless I missed something in WWDC, I don't think they'll get it in the very near future on any device. Bringing support to devices without a BT 5.4 radio is a non-starter anyway so I doubt any current Apple Watches could ever be supported?)
Ultimately what you're asking-- to stream directly from the watch to Bluetooth LE hearing aids is impossible and likely to never be possible. The fault is not a lack of Apple-friendly standards on the hearing aids themselves.

I have never owned an Apple Watch until now bcz I prefer conventional watches more. However, my everyday watch got damaged and so I ordered myself an apple watch. The one I bought is 10, for a £100 less than brand new 11 and just £50 more than SE3. An undeniable deal!
5G doesn’t apply to me bcz I’ll be pairing it with my iPhone. 24hr battery life doesn’t matter bcz I don’t wear a watch for 24hrs. And lastly, the more the scratch-resistance the less the drop-resistance. Hence, I just got a £100 discount on literally the same watch!
Crazy that they didn’t even give a new chip to watch ultra 3! I mean watch 10, se3, 11 and Ultra 3, all have the same chip, meaning basically the same function on every software update!

I have the series 10 in titanium, I am in Canada so my 10 cost me a little over $1200.00 it still has 100% battery health and lasts me 26 hours, I’m trying to see if the 11 is worth the upgrade. 💁🏼♀️

They still sell a "GPS" and "GPS + Cellular" variants with cellular costing $100 more. I'm looking at Apple's website right now and I can see GPS and GPS + Cellular variants.
